Bread



This Zucchini Banana Bread
made with zucchini and banana


It is a very moist, soft and healthy
Taste full of banana flavor only,  
you can't taste zucchini


Good for tea time or breakfast
and with cup of coffee or tea

 
     Ingredients         

For 23*13cm loaf pan

All-purpose flour 1 1/2 cup (180g)
Baking powder 1 teaspoons
Baking soda 1/2 teaspoon
Salt 1/4 teaspoon
Cinnamon powder 1 teaspoon
Egg  2
Sugar 3/4 cup (150g)
Vegetable oil 1/3 cup (75ml)
Vanilla extract 1 teaspoon
Mashed Bananas 2/3 cup (200g)
Shredded zucchini 1 cup (130g)*
*after squeeze out excess water

Line with parchment paper in the bottom and the sides of pan
Or grease pan with butter, and dust with flour
 
Preheat oven to 180°C / 350°F .
 
 
Shred the zucchini, 
and using the hand or kitchen paper to squeeze out excess water
set aside
 
 
Mash banana with fork,
set aside
 
 
In a large bowl,
 mix flour, baking powder, baking soda, salt and cinnamon powder
all together , set aside
 

In another bowl,
add sugar, oil, vanilla extract and eggs,
mix all together
 Then add mashed banana, and mix well
 
 
Add the dry ingredients into the wet ingredients
and whisk together until just combined.
 
 
Stir in zucchini 
 
 
Pour cake batter into cake pan
 
 Bake at 180°C/350°F for 50-55minutes
until top is golden brown  
and a skewer inserted in the center comes out clean
 
 
Let cake to cool for 10 minutes,
then remove cake from pan,
and place on a wire rack to cool
