Matcha(Green Tea) Pound Cake



Matcha(Green Tea) 
Pound Cake


  
A very buttery, dense, sweet and bitter cake
You can sprinkle with powdered sugar
If you like more sweet taste

Better serve at room temperature
with cup of coffee or tea



    Ingredients     
For23*13cm loaf  pan


All-purpose flour  1 1/3 cup (165g)
Matcha green tea powder 15g
Baking powder 1 teaspoon
Salt 1/4 teaspoon
Unsalted butter(room temperature)  3/4 cup (180g) 
Sugar  1 cup (180g)
Eggs (room temperature) 3
Milk (room temperature) 40ml

Line with parchment paper in the bottom and the sides of pan
Or grease  loaf pan with butter, and dust with flour
 
 Preheat oven to 170°C / 340°F .


 Sift the flour, matcha green tea powder, baking powder and salt together, 
and set aside


 In a large bowl,  
whisk the butter and sugar with hand mixer 
on the high speed for about 2-3 minutes 
until pale and fluffy


Add eggs one by one at time 
whisk with hand mixer on medium speed
And then add milk ,continue to whisk



Add sifted flour ,  
whisk with hand mixer on medium speed ,
until the cake batter is combined for about one minute 


Pour the cake batter into cake pan, 
using a spatula smooth out 


Bake at 170°C / 340°F for 20minutes
then 160°C / 320°F for 35-40 minutes
or until top and bottoms are golden brown
and a skewer  inserted in the center comes out clean



Let cake to cool for 10 minutes, 
then remove cake from pan, 
and place on a wire rack to cool completely

Banana Cake



Banana Cake



This banana cake is very fluffy, 
soft and moist

    Ingredients     
For20*20cm square cake  pan


Milk   1/4 cup (40ml)
Unsalted butter(melted) 1/4 cup (40g)
Egg white 3
Sugar   1/2 cup (100g)
Egg yolk  3
Vanilla extract 1 teaspoon
Mashed Bananas 1/2 cup (120g)
Cake flour   1 cup (120g)

Grease cake pan with butter, 
or line with parchment paper in the bottom 
Preheat oven to 170°C / 340°F .


 In a small bowl, mix milk and melted butter together,
 and set aside


 In a large bowl,  beat the egg whites with a hand mixer
When egg whites is foamy, add sugar a little by little at a time,
Add vanilla extract , and beat egg whites until stiff peaks



Add egg yolks, and whisk with hand mixer on low speed  ,  
mix well but don't over mix
Add mashed banana and mix well
 don't over mix.


 Add sifted flour, mix well until the cake batter is combined
Don't over mix


 Pour few of the cake batter into milk and melted butter, 
and mix well.
Then pour back into cake batter, 
and stir with a spatula until the cake batter is evenly combined.
Do not over-mix



Pour the batter into cake pan , 
and tap the cake pan to release air bubbles

Bake at 170°C/340°F for  25- 30 minutes
until top is golden brown 
and a skewer  inserted in the center comes out clean




Let cool for 10 minutes, 
then remove cake from pan, 
place cake on a wire rack to cool completely

Braided Red Bean Bread

Red Bean Bread



     Ingredients     
For23*13cm  loaf pan


Instant dry yeast 3g
Lukewarm milk  1/4 cup (50ml)
Sugar 1 teaspoon

Milk  1/2 cup (100ml)
Egg  1
Sugar  1/4 cup (30g)
Unsalted butter(Melted)  1/4 cup (30g)
Bread flour  2 1/3 cup (300g)
Salt 1/4 teaspoon
Red bean paste 250g

Egg wash
Beaten egg 2 tablespoons
Milk/water 2 teaspoons

In a small bowl, 
add one teaspoon of sugar and yeast to the warm milk , 
let it rest for 10 minutes,until the yeast activates.


In another small bowl, 
mix milk, egg, and  melted butter all together


 In another big bowl, mix flour, sugar and salt together


 Add wet ingredients into flour 
and mix well


 knead the dough until the dough is smooth 
Cover with a plastic wrap 
and ferment in a warm place 
for  1 1/2 - 2 hours or until it doubles in size.


Roll out the dough into a rectangle


Spread red bean paste over the surface of the dough
 *Can add red bean paste more or less as you like*


Start with long side to roll dough up tightly and seal edge


Cut the dough in half  and turn the cut sides up
Twist the two doughs, and keeping the cut side up,  
pinch the both sides



Place dough into loaf pan
Cover with plastic wrap, 
and rest dough in a warm place for 40-60minutes, 
let rise until double in size.



Preheat oven to 180°C / 350°F.


Apply a thin layer of egg wash to the dough


Bake at 180°C / 350°F for 20-25 minutes
or until top is golden brown
