Cinnamon Sugar Donut Muffins



Cinnamon Sugar 
Donut Muffins


Very fluffy, soft muffins 
taste just like cinnamon donuts


    Ingredients     
For 12 muffins

All-purpose flour  1  3/4 cup (230g)
Baking powder  2 teaspoons
Cinnamon powder 1/2 teaspoon
Salt 1/4 teaspoon
Sugar  3/4 cup (150g)
Vegetable oil  1/3 cup (70ml)
Plain  yogurt  1/4 cup (65ml)
Egg 1
Milk 1/2 cup (120ml)

Topping
Cinnamon powder 1 tablespoon
Sugar 1/3 cup (70g)
Unsalted butter(Melted)  1/4 cup (50g)

Grease  cupcake pan with butter
 Preheat oven to 180°C / 350°F.


 In a large bowl,  
stir together flour, baking powder, cinnamon and salt, 
set aside


In another bowl,
 add sugar, vegetable oil, yogurt and egg
 mix all together


Add milk, mix well


Add the dry ingredients into the wet ingredients 
and whisk together until combined


Filling cake batter into cupcake pan

Bake at 180°C / 350°F for 20-25 minutes
until top is golden brown 
and a skewer  inserted in the center comes out clean



Let cool for 10 minutes, 
then remove muffins from pan


In a small bowl, 
mix cinnamon powder and sugar together


Dip the warm muffins into the melted butter, 
then roll in the cinnamon sugar

Gifu Park Triple Tower



Gifu Park 
Triple Tower



Gifu (岐阜市, Gifu-shi) 
is a city located in the south-central portion 
of Gifu Prefecture, Japan
Our road trip from Tokyo to Gifu 
took about 5 hours for driving, 
total is about 400 km


 Gifu Park Triple Tower
This Triple Tower is located at the foot of Mt. Kinkasan. 
it was designed as a commemorative project 
to celebrate the throne of the Emperor Taisho,
it was established in 1918.


















**when you drive around the mountain side 
be careful of rock, 
our car windshield got cracked by that rock **

Lemon Olive Oil Cake



Lemon
Olive Oil Cake





This cake made with fresh squeezed lemon juice 
and extra virgin olive oil , 
is very soft, tender and moist.


    Ingredients     
For 7-inch round cake pan 

All-purpose flour  1 cup(130g)
Baking powder  1 teaspoon
Salt 1/4 teaspoon
Egg 2
Sugar 135g (2/3 cup)
Lemon zest 1 tablespoon
Extra virgin olive oil 1/2 cup (100ml)
Milk 1/3 cup (80ml)
Lemon juice 40ml

Optional
Powdered sugar 20g

Grease  cake pan with butter, and dust with flour
Or line with parchment paper in the bottom and the sides of pan

Preheat oven to 180°C / 350°F 


 Mix the flour ,baking powder and salt together, 
and set aside


In a large bowl,  
whisk the eggs, sugar and lemon zest 
with hand mixer on the high speed 
until pale and fluffy,
it takes about 3-5 minutes


Add olive oil, 
whisk with hand mixer on  medium speed 
until is fully incorporate
Add milk and lemon juice ,mix well.



 Add  flour ,  
and whisk with hand mixer on low speed  
until the cake batter is combined


  Pour the cake batter into cake pan
And tap the cake mold to release air bubbles

Bake at 180°C / 350°F for  35-45 minutes
or until top is golden brown
and a skewer  inserted in the center comes out clean



Place cake pan on a wire rack to cool for 15 minutes, 
then remove cake from pan, and place on a wire rack to cool 


Sprinkle  powdered sugar over the top of cake
 ( Optional )
