Pumpkin Muffins

Muffins




These muffins are very easy and quick to make,
they are very moist, soft and tender,
you can add raisins, nuts, fruits, flakes etc.


    Ingredients   

For 12 muffins


All-purpose flour  1  1/2 cups (220g)

Baking powder  1  1/2 teaspoons

Baking soda  1/2 teaspoon

Salt 1/4 teaspoon 

Ground cinnamon 1  1/2 teaspoons

Nutmeg 1/2 teaspoon

Vegetable oil 1/3 cup (100ml)

Pumpkin puree 1  1/4 cup (350g)

Egg 2

Brown sugar 3/4 cup (200g)

Plain yogurt 1/3 cup (80ml)

*Raisins 1/3 cup (60g) optional

* You can add raisins, nuts, fruits, coconut flakes etc.

Place muffin liners in cupcake pan

Preheat oven to 180°C / 350°F .


In a large bowl, stir together 
flour, baking powder, baking soda, cinnamon, nutmeg and salt, 
and set aside







In another bowl, 
add brown sugar, vegetable oil, eggs, yogurt and pumpkin puree 
mix all together


Add the dry ingredients into the wet ingredients 
and whisk together until combined


Raisins dust with some flour, 
and fold in raisins with a spatula 
until just combined, don't over mix

* You can add raisins, nuts, fruits, coconut flakes etc.


Filling batter into cupcake pan

Bake at 180°C / 350°F for 20-25 minutes
until top is golden brown  
and a skewer inserted in the center comes out clean


Let cool for 10 minutes, then remove muffins from pan

Beer Bread

 

Easy & Quick

Beer Bread




This is a very easy and quick bread,
doesn't need yeast, 
and no knead and no rise


   Ingredients   

For 23*13cm loaf pan


All-purpose flour 3 cups (380g)

Baking powder 1 tablespoon

Sugar 1/4 cup (50g)

Salt 1/2 teaspoon

Beer (room temperature ) 1 can (350ml)

Unsalted butter, melted 1/4 cup (50g)

Grease loaf pan with butter

Preheat oven to 180°C / 350°F .


In a large bowl, 
 mix flour, baking powder, sugar and salt 
all together




Add beer and mix well until combined.




Pour the batter into loaf pan
And drizzle melted butter over top of batter.

Bake at 180°C / 350°F for 40-45minutes
until top is golden brown  
and a skewer inserted in the center comes out clean

* It will bubble when baking, 
which is normal because of the butter






Let bread to cool for 10 minutes, 
then remove bread from pan, 
serve warm or room temperature
