Coffee Loaf Cake

Coffee

 Loaf Cake 

 

 

This cake is very fluffy, soft and moist
with rich coffee flavored

Drizzle coffee glaze generously over cake

 

  Ingredients   

For 23*13cm loaf pan

 

Instant coffee   7 - 10g*
Milk  1/4 cup (60ml)
Egg white 4
Sugar 3/4 cup (160g)
Egg yolk  4
Cake flour   1  1/4 cup (160g)
Vegetable oil    1/4 cup (60ml)   



Coffee Glaze (Optional)

Instant coffee   5 - 7g*
Milk  1 ~ 1 1/2 tablespoon
Powdered sugar 1/2 cup (60g)


*Add more or less coffee on personal preference

Line with parchment paper in the bottom and the sides of pan
Or grease pan with butter, and dust with flour

 

Preheat oven to 150°C / 300°F .

 


In a small bowl,
mix instant coffee  and warm milk together
and set aside

 

In a large bowl,
 beat the egg whites with a hand mixer
When egg whites are foamy , add 1/3 of sugar
And then add sugar in batches
Continue to beat egg white until stiff peaks


Add egg yolks,
 and whisk with hand mixer on low speed  ,  
mix well but don't over mix

 

Add sifted flour

 

Mix well until the cake batter is combined  

 

Add vegetable oil into coffee mixture, and mix well

 

Pour few of the cake batter into coffee mixture and vegetable oil,
and mix well.

 

Then pour back into cake batter,
and stir with a spatula until the cake batter is evenly combined.
Do not over-mix
 
 
Pour the batter into cake pan ,
and tap the cake pan to release air bubbles

Bake at 150°C / 300°F for  40-50minutes
until top is golden brown  
and a skewer  inserted in the center comes out clean

 
 

Let cool for 10 minutes,
then remove cake from pan,
place cake on a wire rack to cool completely
 


 



Coffee Glaze (Optional)

In a small bowl, mix instant coffee  and warm milk together

Mix powdered sugar and milk together,
until the glaze is at the right consistency.

Drizzle coffee glaze generously over cake
