Fluffy Cheese Cake



Fluffy Cheese Cake



This cheese cake, 
it's very fluffy and easy to make.



Ingredients
For 6-inch round cake pan
 
Flour 30g
Cornstarch 15g
Unsalted butter 30g
Egg 3
Cream Cheese 150g
Sugar 70g
Milk 75ml



 
 Preheat oven to 320°F/160°C
Grease cake pan with butter, 
and line with parchment paper in the bottom and the sides
Be sure to wrap the bottom and sides completely in foil to prevent any leakage, 
if  using a springform cake pan
 

In a large bowl,  whisk the milk, cream cheese, and butter
 over the water bath until smooth

 
 
Add egg yolks one at a time





Sift in the flour and the cornstarch
mix well until smooth 



  In another large bowl, beat the egg whites with a hand mixer 


When egg white is foamy , 
add sugar a little by little at a time until stiff peaks



Pour about 1/4 of the egg white and fold it into cake batter, 
and then repeat with the remaining egg white 
until the cake batter is evenly combined.









Pour the batter into 6-inch cake pan , 
and tap the cake pan to release air bubbles




 Bake with water bath in a preheated 160°C / 320°F for 15 minutes, 
and then 150°C / 300°F for 50 minutes .
**After turn off the oven,  open the door of the oven slightly,
 let cake cool down in the oven for 30 minutes
 




Serve immediately or 
chill in a fridge for couple of hours or overnight
