Sweet Potato Muffins


Sweet Potato 
Muffins



Very fluffy and soft muffins
Made with mashed sweet potato
Topping tastes just like cookies

 
     Ingredients     
For 12 muffins

All-purpose flour  1 1/4cup (150g)
Baking powder  1 1/2 teaspoons
Baking soda 1/2 teaspoons
Ground cinnamon 1 teaspoon
Salt 1/4 teaspoon
Eggs 1
Sugar  2/3cup (140g)
Vegetable oil 110ml
Plain  yogurt 150ml
Mashed sweet potato 3/4 cup (150g)

Topping 

All-purpose flour 1/3cup (50g)
Brown sugar 1/4cup (50g)
Ground cinnamon 1/2 teaspoon
Melted butter 1/4 cup (30g)




Grease  cupcake pan with butter 
or place  liners in cupcake pan
 Preheat oven to 180°C / 350°F.

Topping

 In a small bowl,
 add flour, brown sugar, cinnamon and melted butter, 
mix all together, and set aside
 ♪♪♪♪♪

 In a large bowl,  
stir together flour, baking powder, baking soda and salt, 
set aside

 In another bowl, add egg and sugar, mix well
And then add vegetable oil and yogurt 
mix all together


Add mashed sweet potato and mix well


Add the dry ingredients into the wet ingredients 
and whisk together until combined


Filling cake batter into cupcake pan
put topping on the top of each cake batter

Bake at 180°C/350°F for  20-25minutes
and a skewer  inserted in the center comes out clean
