Scones
These scones are light and fluffy,
very easy and quick to make with pancake mix
Is perfect with jam, butter and cream
or icing on the top of scones
Ingredient
Pancake Mix 200g
Plain Yogurt 80g
Unsalted butter 50g
Raisin 35g
In a large bowl,
put pancake mix and cold butter,
using finger to mix pancake mix and butter together until look like fine crumbs
Add plain yogurt and raisin, stir all together.
Lightly knead the dough until everything is come together
Wrap and store in fridge about 30 minutes
Pat the dough out to about 1 inch thick round ,
and cut the dough into 8 triangles.
Transfer the dough onto a parchment lined baking sheet
and brush tops with plain yogurt or milk
Bake at 180°C / 350°F for 20minutes
or until top and bottoms are golden brown
Serve with butter and jam
